Black Cumin, commonly known as black zebra or Kala jeera is a very popular spice in North Indian cuisine and is a basic ingredient in Kashmiri cuisine as well. Generally used to flavor meat and rice dishes, it has a distinctly rich, nutty, and slightly peppery taste.
Kashmiri Kala jeera is very rich in taste and smell as well. The small crescent-shaped jeera is generally dark brown and black in color. Zeera as such is used in cooking in raw as well as roasted form, both imparting a distinct flavor to the dish. The seeds may be baked into bread, added to curry pastes and blends, or steamed with rice to give it a distinctive scent.
